Technologies to minimize the salty taste of electrolytes

Background

PepsiCo is seeking new technologies to minimize the perception of a salty taste in beverages containing electrolytes.

What we're looking for

PepsiCo is open to a range of collaboration types, but the technology should be available for scale-up within the next 3 year.

Solutions of interest include:
  • Taste advantaged salts (less salty than NaCl), other mineral ingredients, or blends that can mask/balance saltiness
  • Encapsulation/plating technologies to reduce the perception of saltiness
  • Ion exchange/ion binding to remove salty tasting anions
  • Salt receptor blockers
Our must-have requirements are:
  • Clear appearance (not cloudy or containing sediment)
  • Colorless
  • No impact on flavor other than the requested reduction in salt perception (undetectable when tasted dissolved in water)
  • Unacidified, unsweetened (no declaration of acidulants, sweeteners)
Our nice-to-have's are:
  • GRAS (Generally-Regarded-As-Safe) approval
What's out of scope:
  • We have already evaluated product interventions including flavor-based masking agents, cooling agents.
